Coessens Champagne Brut Les Sens Boises 2020 TBO Still very youngJrme Coessens is a grower Champagne purist working in the Aube's Cte des Bar, far south of the famous chalk hills. His project follows a single, exacting idea: one vineyard, one variety, one expression. Every cuve comes from Largillier, his single, mostly Kimmeridgian limestone parcel the same geological vein that runs through Chablis and every bottle is 100% Pinot Noir. Les Sens Boiss is the oak aged cuve, partially vinified in barrel to add textural
